How much time can I wait until I varnish my white violin, because I'll be absent for some time, maybe 6-7 months, maybe even more. Will it change colour if it is not varnished?

It can get a bit darker, that will be good.

Unless it will be exposed to atmospheric cooking grease or otherwise get icky... leaving it long is great! As Manfio says, it will get darker, especially if exposed to sunlight, even through windows... and that will give it a lot of visual "depth" that so many new instruments lack.
