The accepted way to position a bridge is to place the straightest grain towards the tailpiece and then thin down the fingerboard side .The reason given for the straight back towards the tailpiece is that it is the strongest side . But what happens when the strings pull the bridge top towards the scroll end ? More pressure is put on the "weaker" side.
The bridge feet will press down harder on the scroll side even if you see no gap at the belly surface. Obviously it`s simpler to check the 90 degree angle on the tailpiece side. But is that obvious ,easy check better than anyting else ? It`s a good question to ask .Strings are fitted to pull in one direction as you tune up.Physics is not bothered about what we find easy and obvious . Strings will pull to bend the bridge regardless .
If a wooden implement was made to maintain the bridge to fingerboard distance regularly , we could relax and rely on the familiar 90 degree setting .
